Preheat oven to 375°F (190°C). Grease a casserole dish.
In a skillet, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden.
Gradually whisk in milk, stirring continuously until thickened. Season with salt and pepper.
In a separate pan, brown venison sausage slices until cooked through.
In the casserole dish, layer the cooked venison sausage, mixed vegetables, and prepared white gravy.
Spread mashed potatoes evenly over the top and sprinkle with shredded cheddar cheese.
Bake for 25-30 minutes until cheese is golden and bubbling.
